Easy Breakfast: No Cook Protein Bars
Breakfast, you know you should eat it, but really, do you actually EAT it? I enjoy coffee, but coffee by itself does not count as breakfast, I don’t care how much shtuff you put in it. If you’re saying, “But Rachel, I don’t have time in the morning/not hungry in the morning/don’t have the time/money/energy,” I have a great solution for you.

This bar is easy to put together, no cooking required, fun to do with kids, and overall pretty cheap.
I like something that I can make once and eat for days, especially when it’s breakfast related. These last all week, even out of the fridge.
- 1 ripe Banana
- ½ c Maple Syrup (or agave, yacon syrup)
- ½ c Peanut Butter (or any nut butter, i.e. almond, pecan, cashew, etc.)
- 1 Tsp Vanilla Extract
- 1 ½ c Oats
- ½ c Shredded Coconut (I used unsweetened)
- ½ c Raisins (or cranberries, craisins, dried cherries/mangoes/apricots/etc. any dried fruit will work)
- ½ c Chocolate Chips (or carob, butterscotch, white chocolate chips, etc.)
- 2 to 4 scoops of Protein Powder (I use Amazing Meal)
- 2 Tbsp Flax Seeds
- 2 Tbsp Chia Seeds
- 1 ½ Tsp Cinnamon
Yields: Approximately 10 decent sized bars
Mix wet ingredients in one bowl; you really want to mash the banana to get out most of the lumps. Mix dry ingredients separately then slowly add to wet bowl while mixing. Mix it up REALLY good. Plop the mixture onto wax paper, fold the wax paper over (or put a second piece on top) and use a rolling pin to flatten it to a consistent thickness. Let sit for a few hours or overnight to “set” before cutting into bars.
