Homemade Peanut Butter Cup

I’ll keep this short and to the point. I love Reese’s Peanut Butter Cups. And I HATE their ingredients (have you read that list?!). Then one day, I stumbled upon THIS RECIPE. I’m a lazy chef and I love peanut butter. The recipe hung out in my browser for at least a month before I finally stepped up and made some magic.

Oh yeah. It's delicious. And I'm taking a picture with my DSLR with one hand so I can hold the bread up with the other. NOT EASY.

It Ain’t Pretty, It’s My (Apple-Pear) Butter

What do you do when your food share gives you more pears and apples than you know what to do with? MAKE BUTTER!! I do like to eat locally and seasonally, so since moving to Florida I have skipped the fall apple frenzy (and the following apple sauce frenzy). But in the last two weeks I ended up with over 10 pears and 20 apples. My husband doesn’t eat them (not in their “natural” state and I can’t eat that ...

I kept meaning to take pictures when the light was good. Then I ate almost all of them....

Healthy Cookies Have Saved My Pregnancy

Let me start off by saying I am not a supporter of hiding good foods in “treat” foods. It teaches kids (or stubborn adults) bad behaviors. Don’t believe me? Check out this article or this one. The only reason I call this fabulous recipe “healthy cookies” is because it is pretty healthy, and it happens to cook in the cookie form.

Cornbread with raspberry-basil sauce

A Healthy(ish) Brunch

Brunch just might be my favorite meal. I will look for any excuse to throw a brunch get together at my house. But it’s easy for baked brunch goods to get really sweet and sugary. So this last weekend I opted for some lighter fare. The raspberry-basil sauce was the inspiration for the dish. I was eating raspberries, and looking at basil, then thought, “These would taste really good together. What can I put this on top of?” And even ...

Quinoa comes in a few varieties, the light brown is the most common. Black and red can often be found in health food and specialty stores.

Cheesy Baked Quinoa

I love quinoa. There, I’ve said it. Back in St. Louis my friends called me the Quinoa Queen because I introduced EVERYBODY to my favorite little seed. Yes, quinoa is a seed. It looks like a grain and acts like a grain, but is actually the seed of a grass like plant from South America.

All mixed up, plopped, and ready to roll

Easy Breakfast: No Cook Protein Bars

Breakfast, you know you should eat it, but really, do you actually EAT it? I enjoy coffee, but coffee by itself does not count as breakfast, I don’t care how much shtuff you put in it. If you’re saying, “But Rachel, I don’t have time in the morning/not hungry in the morning/don’t have the time/money/energy,” I have a great solution for you. My egg SALAD dinner

Quick dinner

I love food, I love cooking, I love cooking food quickly. I also love eggs, and I had an abundance of eggs in my refrigerator. So I boiled a bunch (saved some for breakfasts and snacks) and made a simple egg salad.

My new favorite cake!

The finished dish, so light, so crisp!

Signature Dish – Part I

When it comes to food, there’s nothing better than fresh, whole food, in a homecooked dish. There are plenty of recipes that my husband and I make at home on a regular basis, but I’ve been searching for a few years for my “signature dish” that I can bring to family dinners and parties. A few years ago I brought cranberry quinoa to Thanksgiving (with brown sugar pecans and pomegranates) and let’s just say after that, I was told what ...

Food Demo

Quick N Easy Corporate Food Demo

Oh man, do I have a new respect for chefs and caterers. Sure I’ve been cooking for a while, but in this past week I’ve spent many hours making food for some corporate food demonstrations. Making food, multiple days in a row, for more than a family size portion, gets tiring! BUT, it has been fabulous. The goal of this class/demo is to show busy office types that it can be easy AND tasty (yes, tasty) to make healthy food. ...

Sneak Peak: Corporate Food Demo….

The last week has been VERY busy, between a trip to Chicago for a wedding and preparation for multiple days of corporate food demos. Recipes and details on the food demos will follow soon. For now, here’s a sneak peak, literally. Check back soon for details and recipes.

Lemon Thyme Baked Potatoes

101: Roasting vs. Baking

I love my oven. I use it regularly, for everything from potatoes and broccoli to cookies. But I have NO IDEA what the difference is between roasting and baking. So I’ve done some research….and I’m passing it along to you! From the Merriam-Webster Dictionary: roast: to cook by exposing to dry heat (as in an oven or before a fire) or by surrounding with hot embers, sand, or stones<roast a potato in ashes>I love my oven. I use it regularly, for everything ...
